Witch's Boots and a Pumpkin Truck

I really need to learn to take better pictures, or maybe just wait until I have natural light to take them, but I just get so excited - especially when I make something new - and can't wait to show off it off.  HA!

I really like this design and the burlap made an awesome pumpkin and I love the texture the corduroy adds to the truck, but I do not like the wheels.  I think they would be much cuter in a lighter sage fabric and lucky for me I found the perfect sage gingham print to use!  So I'll make another shirt using that fabric for the wheels and I'm also going to flip the design, because for some reason it looks backward to me, then that baby will go up for sale in my shop!

30 Day No Eating Out Challenge FAIL

I made it 14 days into the "No Eating Out" Challenge and then I caved!  The saddest part is we very seldom eat out and have gone 30 days straight plenty of times before, but you know how it is when you are trying not to do something.  HA!

I think we left off last week on Monday, so here's what we had the rest of the week:

Tuesday - Hamburger Helper and Green Bean Slop
Wednesday - Randy's Burgers and Fries
Thursday - Buffalo Grilled Chicken, Home-made Scalloped Potatoes and Caesar Salad
Friday - Steaks, Baked Potatoes and Sauteed Mushrooms
Saturday - Grilled Mahi Mahi, Steamed Broccoli and Rice Pilaf - YUMMY!
My Choice - Blackened Mahi Mahi

Randy's Choice - Teriyaki Ginger Mahi Mahi

Sunday Breakfast - bacon, eggs, hashbrowns, home-made biscuits and gravy...


...it was all DOWNHILL from there! HA! 


This silly little boy and I went to Taco Bueno for lunch and it was SOOO good!   I've only had Bueno a few times since he was born, probably because after 9 months of eating it daily while pregnant I was a little burned out! HA!  It was Jack's first trip to Bueno and he loved it!  He ate a beef taco roll-up thingy and half my bean burrito.  Hog Heaven!!

Then for dinner we ordered pizza.  Pizza Hut has some new pizza out, so we tried it and it was really good!

So, come tomorrow, we'll be back on the "No Eating Out" bandwagon, but boy was eating out good today! HA! 

PS - I never knew how BAD we eat until I started writing it down everyday.  WOW!  It's amazing we aren't as big as the house! HA!

Just Jack

Jack loves to play in the kitchen while I cook dinner, wash the dishes, etc.  These pictures are from last night.

It's Raining, It's Pouring

Ok, not really, but it is sprinkling and the weatherman actually got it right this time and a cold front did come through!  Hallelujah!  The thermometer in my car read 73 degrees which is a welcomed change from the 103 it's been reading!  HA! 


Jack even got to wear long overalls and new tennis shoes today!  Yay!  From the looks of these pictures though I was more excited about the overalls and new shoes than he was!


I think he knew it was time to go to school and was NOT happy about it!  He was moved to the toddler room permenantly yesterday - he's been visiting for a week or so - and he does not like it at all.  The teachers keep telling me he's doing better in there, but he gets really clingy when we walk in the class and cries when I put him down in the mornings and is usually crying when I pick him up in the afternoons.  Hopefully he'll get used to it soon because it's killing me!

Supper Club

Tuesday Night Supper Club

I thought it only fitting to do a Supper Club post since we are participating in the 30-Day No Eating Out Challenge!


Since my last menu and recipe post here's what we've had for dinner:

Friday
Digiorno Pepperonie Pizza (close enough to take-out for me!)


Saturday
I have no idea what we ate all day on Saturday, I guess just snacks or maybe left-over enchilada casserole, but for dinner we had teriyaki grilled pork loin and fried rice - YUMMY!


Sunday
Snacks all day and 15-bean soup with sausage for dinnner.
I buy the pre-packaged bean soup mix and then add sausage or hamburger.
I also slow cooked the other pork loin (the package I buy has 2) to make enchiladas.

Monday

Pulled pork enchiladas with refried beans and taco rice.

Pulled Pork Enchilada Recipe

2 lbs pulled pork (I cook pork tenderloin with spices in the crock pot on high for about 4-5 hours, then shred with a fork)
8-10 corn tortillas
canola or vegetable oil for frying
1/2 cup heavy cream
1/4 cup sour cream
1/2 cup velveeta cheese
1 tsp chopped jalapeno, or more to taste
a little garlic powder
a little cumin
a little chili powder
salt & pepper
1/2 cup shredded cheddar cheese
sliced jalapenos, optional

  1. Pre-heat oven to 350 degrees.

  2. Line plate with paper towels.

  3. Heat oil in skillet, heat tortillas one at a time in hot oil, about 10 seconds on each side, stack heated tortillas up on paper towel lined plate.

  4. Put pulled pork in middle of each tortilla and roll up, place side by side in baking dish.

  5. Bake enchiladas uncovered for about 15 minutes.

  6. For sauce, add remaining ingredients, except shredded cheese and sliced jalapenos, to a sauce pan and heat through, stirring often.  Taste and adjust spices as necessary.

  7. Once enchiladas have baked for 15 minutes, top with sauce, shredded cheese and jalapenos and bake for an additional 15 minutes or until cheese is melted.
Serve with your favorite chips, salsa, refried beans and rice.

Sensory Processing Disorder Blog Event

Happy 13 Months Little Man


Jack, you are 13 months old now!  I can't believe how much you have changed in just the past month!


You love to "dance" to the music and every time we're outside, you walk over to the radio and start clapping, sometimes you even turn up the volume so we can really jam!  HA!


You are walking really well now and really fast!  You are into everything too!  Just last night you made it to the wine rack before I could catch you and broke your first bottle.  Luckily, it fell inside the rack and you didn't get hurt, but we'll be moving it out of your reach today!  You love to play with my thread in the sewing room and carry it around like it's a treasure!  You also love to throw things and are constantly throwing your toys on the ground and your food off your tray.


But not before you eat all you want, of course!  You are still a really good eater and will eat almost anything I give you.  I tried to get you to eat beets (they taste like dirt and well, you like dirt) but you would gag and spit them out.  It was pretty funny!  Your favorite foods are still peanut butter sandwiches, grilled cheese, bananas, yogurt, applesauce, nilla wafers, goldfish and cheerios, but you now like carrots, green peas, all meat, mashed potatoes, oatmeal, and beans.  You also love milk and water.  


You really like being outside, but you do not like walking in the grass.  You walk to the edge of the concrete, turn around and come back.  You like to be pushed in your cozy coup and you LOVE your ball popper thingy.  You are so inquisitive and check everything out.  When we are outside we are constantly moving things out of your reach, which is getting pretty long now.  You are getting so tall and can reach on top of most tables now.


Separation anxiety has set in and now you cry when I drop you off at school and it breaks my heart.  You also cry when Daddy or I walk out of the room.  You are trying out the "toddler" room and you are NOT a fan.  You don't like to take naps in there and I'm pretty sure you cry most of the time you're in there.  You LOVE Miss Juany and every time you see her you want to go where ever she is going.  She is really sweet and spoils you rotten loves on you. In the toddler room you sit at a big boy table and it is so funny to see you sitting with all the other kiddies reading your book.


You love books!  You say "buuuu" for book and point at them when we're sitting in the rocking chair.  You will now sit still when I'm reading to you and you also point at the pictures when I say the name while reading.  You're really into the "touch and feel" books now.  You are really smart and will hand me whatever item I ask for and can go get a specific item when asked.  Your favorite toy is a baseball bat, but you would prefer to play with household items.  You don't say many real words yet, but you're working on it.  You babble up a storm and it sounds like you try to repeat the things I say.  I know it's only a matter of time before you'll be talking up a storm!

Chicken Parmesan

The Challenge started Sunday and here's what we've eaten for dinner this week.  We typically don't eat breakfast and for lunch during the week Randy eats left-overs, Jack eats at school and I eat at work.  ($1 is automatically deducted from my check each day, so in my opinion that is basically eating for free!)  So I'm only going to list what we have for dinner.

Sunday
Grilled Steak, sauteed mushrooms and baked potatoes

Monday
Randy's Grilled Hamburgers, home-made onion rings and french fries
I made chicken salad for Randy to eat during the week.

Tuesday
Left-over burgers and caesar salad

Wednesday
Chicken Parmesan and Garlic Bread
I love this chicken parmesan recipe - it is so QUICK and EASY!

cut 2 chicken breasts to 1/2 inch thickness to make 4 pieces
dredge in flour seasoned with garlic salt, dip in egg, then in Italian style Panko bread crumbs
Pan fry on medium heat about 8 minutes on each side, or until internal temp reaches 165*.
Serve with pasta and your favorite marinara.  I like Hunts Zesty Sauce and angel hair pasta.
Add salad and bread for a complete meal.  Serves 4.

Thursday
Who knows!  But we have ground beef and pork loin, so we'll make something with one of those. 

I'll be back on Sunday to list the rest of our meals for this week.

And last, but not least, my latest creation!
A cute clutch!  This was fun to make and is the perfect size for a wallet, lip gloss, keys and phone.  Or it could be used as a diaper clutch and filled with diapers, travel wipes case, diaper cream and burpie. 
So versatile! I love it!

Jack is 13 Months today, so I'll do that post tonight when I have new pictures of him!
